Blingy, Shephards Pie - is made from minced Lamb
Cottage Pie - is made from minced beef
So in mine -Cottage Pie, I use minced steak, with ingredients, of carrots, peas, mushrooms, nothing fancy  and of course mash potatoes on the top, my DH likes grated cheese on top of the potatoes as well, but you can add anything you like, onions, peppers, celery, whatever you like. We like ours spinkled with Yorkshire Relish ( not sure what your equivalent would be) not forgetting the gravy

Lol my recipes aren't really recipes, more like concepts since I don't measure anything nor do I make things exactly the same way twice but here is the idea
Cowboy Potatoes
Mixed veggies (I use a combo of green beans, peas, carrots, corn usually, they should be bite sized or smaller, steamed)
Potatoes (a little more potato than veggies in quantity, I peel and boil Russets, when very done pour off water and shake over flame so they're nice and mealy)
Sour cream or regular cream or both
Equal parts extra sharp cheddar cheese and pepper jack cheese (the pepper jack is essential)
After the potatoes are done stir in the cheeses and cream, stir roughly or even mash a bit but don't totally kill the lumps, make sure it's a very creamy mixture, I mean that there's plenty of the dairy stuff to accommodate the veggies too. Then carefully stir in the veggies and voila!

I slice the potatoes into rounds, and also slice some onions up and I fry them with lots of salt and pepper....I fry them in olive oil. I put a lid on while they are cooking.
That way they get tender while they are browning nicely. Yummy
Our scalloped potatoes are diff than the ones mentioned earlier: Slice potatoes and slice onions. Butter a casserole dish and put the potatoes in flat like a layer.
put little pats of butter and slivers of onions scattered about. Then, make a gravy, or roux out of milk and butter or regular oil and milk. Like a white milk gravy. I also add a little garlic powder and celery salt. continue with layers as before and then pour gravy over all. Set on a pan as it can bubble over. Cook on med + for at least an hour. You can also substitute Celery soup instead of the gravy. We usually have it with ham.
Sweet potatoes (the orange ones). I usually buy them canned just to save time.
I put a little butter and some dark brown sugar and a little bit of cinnamon and melt it all together. Then, I put drained potatoes in a casserole, pour the sugar mixture over it and add lots of pecans, chopped or whole and then bake ina med oven for 20 - 30 min....then I top with marshmellows and put under broiler (WATCH CLOSELY) till brown about 2-4 min.
