Any hints on cutting the eyes off the plants in hard mode?

You have to be-head the eye plants one at a time and in a specific order. It's trial and error to find the order. If you get one wrong you have to start again until you cut them all off in the correct order.

As JulieJay mentioned, it's a bit of a memory task. You can take notes on which ones work in order, so you can easily remember which ones work as you go. If you run into one that resets the puzzle, then you can try a different one in its place until you're able to progress. Then, just make a note of which one it was, and you'll be finished in no time!
