Our favorite recipes!

This is my Mama's famous mac-n-cheese for Rentonwa.

Spray a 9X13 glass baking dish with cooking spray. Preheat oven to 350. :
Boil macaroni per directions on box.
Put a layer of macaroni in baking dish. Then cover with pats of butter or marjarine. Cover that with slices of Velveeta cheese. (Velveeta is a MUST.)
Then another layer of macaroni, butter and cheese, followed by another layer of all three ingredients.
Pour Vitamin D (not skim or 2%) over top. Stop pouring about an inch from the top to keep it from spilling over as it cooks. (I generally put aluminum foil under dish while cooking.)
Bake about 1 1/2 to 2 hours at 350 or until the cheese starts turning black.
Enjoy!
I swear I watched her make this so many times as did my other 2 sisters, but somehow ours is just NEVER quite as good as Mom's was.

I'm not much of a cook, but I do make a MEAN baked macaroni! Not gonna post it though, because I don't want to "overshadow" Basketcase's recipe! Hmmm, I think I'll make a batch tonight for me and my son, it's his absolute favorite! It's good comfort food, ALMOST as good as ice cream!

Gotta go get my dishes made for tonight and tomorrow. I'll be back and post the taco salad recipe that someone asked for later today! Have a good one everybody. And basket, thanks for starting this thread--I know some really good stuff will be found here!

Thank you so much for starting this thread, basketcase - I will definitely make this next week sometime (have to get the Velveeta and the whole milk first) - I already now hubby will love it!

I'm making Hamburgers tonight (didn't feel like cooking out last night and we had green bean/potato soup, a light meal).and I have some fresh white corn.

Gina - I'd like to see yours too, you're not overshadowing - this was meant to be a recipe from all thread, right basket?
lilorange, it was me that asked for the Taco sald recipe - I look forward to reading it.

I love making speghetti sauce and dandilion salad with chicken broth soup,good tea food.

GinaBean, share your recipe, the more the merrier. You might have some tip that I don't know. I'm sure yours is good, but as good as my Mama's...don't know about that!

Okay Basketcase, but I warned you!
Ingredients:
1-1/2 cups elbow marcaroni (cooked according to package)
1/4 cup butter or margarine
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1-3/4 cups milk
8 ounces shredded mild sharp cheese
Saute butter, salt and pepper on low, and when butter melts, blend in flour. Cook over low, stirring constantly, until mixture is smooth and bubbly. Stir in milk and heat to boiling, again stirring constantly. Boil and stir for 1 minute, then remove from heat and stir in cheese until melted. Pour cheese mixture over cooked macaroni and stir, and bake uncovered for 30 minutes @ 375 degrees. YUMMO!

I make a sinful sweet potato casserole...loaded with sugar and pecans. I can hunt up the recipe if anyone is game.

I know how to boil an egg!!!

Hubby does all the cooking in our house. It's either him or take out.

Ooo sillyfeet, sweet potato casserole sounds DIVINE! Go dig it up girl, I'm game! And Scotcat, what's your recipe for boiling an egg? I haven't found a good one yet!

This one's for Ginabean...Sweet Potato Casserole

Ingredients for filling:
2 24 oz. cans sweet potatoes, drained
1 stick melted butter
3 eggs
1 12 oz. can evaporated milk
1 1/2 tsp. vanilla
1 cup sugar
1/2 tsp cinammon

Ingredients for topping:
1/2 cup flour
1 cup light brown sugar
1 cup chopped pecans
1 stick butter

Mix filling ingredients until smooth and pour into 9X13 pan. Mix topping ingredients and add 1 stick softened cut up butter. Continue mixing topping and sprinkle over filling (you may need to flour your hands for this part to keep it from sticking to you). Bake at 350* for one hour (may need to add 10-20 minutes longer) until fork in center comes out clean. Enjoy.

Loaded with calories, sweets and ummm ummm goodness.

He has always been a good cook. I, however have not. I HATE to cook..... I would rather clean litter boxes then cook. Hubby makes most everything from scratch. Homemade pizza, lasagna, beef stroganoff, etc. I can't eat much tho due to my health problems which center on my gut. So, I mainly eat broiled chicken, steamed veggies, whole wheat bread, deli sandwiches (plan turkey or tuna) & I get a treat maybe 2 times a week and get a steak. I only eat 2 meals a day and NO snacking. Anyway, he doesn't have to cook me a lot or anything fancy anymore since I can't eat hardly anything. My ONE vice is a coke a day. Other then that, all I drink is water.

My NO List:

Fruits or fruit juices.
Raw vegetables.
Potatoes
Dips and chips of any kind.
Ice cream, candy, cake, pie, etc.
Booze
Popcorn, trail mix, etc.
Processed foods.
The list goes on..............

I'm sorry Scotcat that you have so many restrictions. There is SOOOOOO much more to life than food though!!!!

scotcat - my husband is one of those people who says that if he could take a pill instead of eating he would do so in a minute - good food doesn't mean much to him. He proabably could eat all of those things but won't.
And I love to eat and cook new things - can you imagine how frustrated I am sometimes because he doesn't or can't appreciate what I cook?
A few days ago we had people over for fresh Copper River Salmon. Everybody was ahhing and oohhing over the food and when I asked him how he liked it he said it "was o.k."

Good afternoon, My husband loves green been casserole. His mother used to make it for him along with hot dog casserole.
Mom used to make some kind of sauce to go on ham that I sure wish I good learn to make.
I can still smell the fresh bread being baked, I wish I could learn to make bread, rolls, cinnamon rolls and other things. Dad was a chef so mom must have learned how to cook from him.
When I remarried a few years ago, my husband cooked beef stew and maybe a TV dinner. Now he is into cooking chicken, steak, hamburgers and other things that I have taught him. Mom was a very good teacher.

Mmmmm... my mouth is watering, but these are too rich for my blood (and my hubby's cholesterol!). Basketcase - your mac and cheese - whole milk and Velveeta - sounds so yummy. But I'd like my hubby around awhile longer, so I'll have to pass on that one. I got excited about Sillyfeet's sweet potato casserole - until I saw the stick of butter in the sweets and again in the topping. Oh well. We can still eat a lot more than you, Scotcat. I'm sorry about that limited diet. A lot of what we eat around here are fresh fruits and veggies (and I always have my fat free ice cream for dessert!)

I know what you mean about the mac-n-cheese. That's why we only have it on special occasions. But when the entire family gets together, that dish is a MUST!
