I chose casual, played levels then next thing it had switched to timed - what goes with this?

There's no timed mode in 5 Star Rio Resort. It's either standard limited moves, 25% more moves mode, or relaxed. If this is the game you're talking about the only thing I can think of is you accidentally clicked the box at the bottom of the game board and changed the mode unintentionally.
